What if my products change every week?

Can the same code work at different markets?
Yes, and separate codes per market are better: scan counts tell you which market's customers actually follow through, informing where you book stalls next season.
Can a QR code take payment at the stall without a card reader?
It can carry a payment link, which is one of the supported content types. You point the code at whatever payment page your provider gives you, print it once, and customers scan and pay on their own phone. QRmkr does not process the payment or see the money: it delivers the customer to your payment provider's page.
How do I keep the banner code readable outdoors in wind and sun?
Print big and print matte. Wind means the fabric moves, so give the code more size than you think it needs, at least 15 cm on a stall banner, and use the SVG so it scales without softening. Matte vinyl beats gloss in direct sun, and dark modules on a light background with a clear margin scan far better than a code laid over a photo.
